Pick A Default Card And Know What The Watch Uses
The first payment card added to Apple Wallet on a device becomes that device’s default card, and Apple Watch opens its default when you double-click the side button. You can change the watch default from the paired iPhone or on the watch.
On the paired iPhone, open Apple Watch > My Watch > Wallet & Apple Pay, scroll to Transaction Defaults, tap Default Card, then choose the card. On Apple Watch, you can also open Wallet, tap More Options > Default Card, then select a card.

The tap and beep confirm that the watch sent the payment information. If the terminal or issuer declines the transaction after that point, check with the merchant or card issuer rather than removing and re-adding the card immediately.
